Ingredients for Easy Maple Cake

  • all-purpose flour: 3 cups
  • butter: 1/3 cup
  • Viking Farms Maple Sugar: 3/4 cup
  • 2 eggs
  • fat-free milk: 1 cup
  • unsweetened applesauce: 1/2 cup
  • baking powder: 2 teaspoons
  • salt: 1/2 teaspoon
  • baking soda: 1/4 teaspoon

Filling

  • walnuts (chopped): 1/2 cup
  • brown sugar: 1/3 cup
  • all-purpose flour: 2 tablespoons
  • butter (melted): 2 tablespoons
  • cinnamon (grounded): 2 teaspoons

Icing

  • confectioners’ sugar: 1/4 cup
  • fat-free milk: 1-1/2 teaspoons
  • Viking Farms Maple Syrup: 1/4 teaspoon

Instructions

Beat butter and sugar in a large bowl a couple of minutes or until crumbly. Then add eggs and mix well. Beat in milk and applesauce, after beating all ingredients mixture may seem a bit curdled.

Combine dry ingredients: the flour, baking powder, soda and salt. Add the dry mix to the butter mixture just until moistened. Take a baking pan (13×9-in.) coated with cooking spray and spread into half of the batter.

Filling and Icing

Take all ingredients for Easy Maple Cake filling and mix them well; sprinkle half of filling over the batter. Now, to make the second layer, gently top with remaining batter and filling.

Turn on the oven and preheat it to 350°. Bake our Easy Maple Cake until inserted in the center toothpick comes out clean (about 30-35 minutes). Cool on a wire rack.
