Maple Glazed Blondies with Apples and Cinnamon

Ingredients

  • 2 eggs
  • apples (peeled and chopped): 3 cups
  • all-purpose flour: 2 cups
  • cinnamon (grounded): 3 teaspoons
  • brown sugar: 1 cup
  • butter (melted): 1/2 cup
  • Viking Farms Maple Syrup: 1/2 cup
  • vanilla extract: 2 teaspoons
  • salt: 3/4 teaspoon
  • baking soda: 1/4 teaspoon seriously

Glaze

  • Viking Farms Maple Syrup: 1/2 cup
  • butter: 1/4 cup
  • brown sugar: 1/4 cup

Instructions

Turn on the oven and preheat it to 350°, then take parchment paper and line a 13×9-in. baking pan with it.

Beat syrup, butter, sugar and vanilla in a large bowl until blended. Beat in eggs.

Take dry ingredients and whisk flour, salt and baking soda in another bowl; gradually beat into maple mixture. Then add apples by stirring them in. When you combine all ingredients, the batter will be quite thick.

Transfer the batter to the already lined with paper pan and place it to the hot oven. Bake 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs.

While waiting for our blondies to be ready, slowly, over low heat, melt butter in a small saucepan, stir in syrup and brown sugar. Bring to a boil over medium heat and keep cooking and stirring 2-3 minutes longer. When the glaze is slightly thickened, remove from heat to slightly cool.

Pour our fresh, warm glaze over warm pastries. Cool completely in pan on a wire rack. Cut into bars to be convenient to bite.
