Total Time to Cook Champagne-Glazed Maple Ham – 3 hours.

Ingredients

  • 1 (9-lb.) reduced-sodium, bone-in cured ham
  • sparkling wine (extra-dry, divided) 1 bottle (750-milliliter)
  • brown sugar: 1 cup
  • Viking Farms Maple Sugar: 1 cup
  • Viking Farms Maple Syrup: 1/4 cup
  • canned pineapple in juice (crushed): 1/4 cup
  • Dijon mustard: 2 tablespoons
  • cloves (grounded): 1/2 teaspoon

Instructions

Turn on an oven and preheat it to 325°F.

Line a roasting pan with foil. Place ham there and put the pan on a rank. Using a knife, make shallow cuts in fat. Pour Champagne (1 cup) over ham; sprinkle with brown sugar. Cover ham with foil.

Combine syrup, crushed pineapple, mustard, cloves, remaining Champagne, and maple sugar in a saucepan. Bring to a boil over high; reduce heat to medium, and simmer about 5 minutes until alcohol flavor has cooked out.

Place ham in the hot oven and bake for 1 hour. Uncover and baste with maple syrup mixture. Cover ham again and keep baking for another 1 hour.

Uncover, baste, and return to oven; bake ham about 30 additional minutes, uncovered, basting every 10 minutes, until a thermometer inserted in center of ham registers 115°F.

When the Champagne-Glazed Maple Ham is ready, be patient and let it stand about 10 minutes before slicing.
