Ingredients

  • sweet potatoes (peeled and cut): 2 pounds
  • salt (divided): 2 1/2 teaspoons
  • Viking Farms Maple Syrup: 6 tablespoons
  • white balsamic vinegar: 6 tablespoons
  • butter: 2 1/2 tablespoons
  • black pepper: 3/8 teaspoon
  • Cooking spray
  • walnuts (toasted) for decoration

Instructions

Turn on an oven and preheat it to 400° to bake our Maple Glazed Sweet Potato.

Take a large saucepan and place sweet potatoes and salt (2 teaspoons), fill the saucepan with water to cover 2 inches above potatoes. Bring to a boil, after keep simmering 10 minutes longer. Drain potatoes.

In a small saucepan mix syrup and vinegar and try to bring to a boil over medium-high heat. Keep simmering until slightly thickened and syrupy (about 4 min.). Remove from heat and whisk in butter and pepper.

Coat a baking dish (11 x 7-inch) with cooking spray. Arrange potatoes in the dish. Top with syrup mixture and sprinkle with salt (1/4 teaspoon). Bake at 400° until potatoes are very tender 4-5 min.). Remove from oven and drizzle with sauce and walnuts over potatoes, sprinkle with remaining salt (1/4 teaspoon). Serve Maple Glazed Sweet Potato while still warm!
