Pork with Maple-Cider Glazing

Total Time to make 4 servings – half an hour

Ingredients

  • 1 pork tenderloin (1 pound)
  • salt: 1/4 teaspoon
  • pepper: 1/2 teaspoon
  • olive oil: 1 tablespoon
  • apple cider: 3/4 cup
  • Viking Farms Maple Syrup: 1/4 cup
  • cider vinegar: 2 tablespoons

Instructions

Turn on the oven and preheat it to 425°. Firstly, we will cook the tenderloin in a large skillet. So take one, pour there some oil and heat it over medium-high. Cut pork tenderloin in half to fit the skillet. Sprinkle meat with salt and pepper (1/4 teaspoon).

Cook the pork on all sides until brown. Now it is time to transfer our meat to a 15x10x1-in. pan and roast it for about 15 min. until a thermometer reads 145°.

While meat is roasting, add cider, syrup, vinegar and remaining pepper to the same skillet and bring to a boil. Cook for about 5 min., uncovered, don’t forget stirring until mixture is reduced to a desired glaze consistency.

Remove pork from oven and when it is possible to handle, slice it.

Serve with maple-cider glazing.
