Ingredients

  • chili powder: 2 teaspoons
  • salt: 1 1/4 teaspoons
  • black pepper: 1 teaspoon
  • cinnamon (grounded): 1 teaspoon
  • pork tenderloin (trimmed): 1 1/2 pounds
  • Cooking spray butter: 2 tablespoons
  • onion (chopped): 1 cup
  • bottled ground fresh ginger: 2 tablespoons
  • chicken broth (fat-free, less-sodium): 1 cup
  • Viking Farms Maple Syrup: 1/2 cup

Instructions

Turn on an oven and preheat it to 375°.

Combine first 4 ingredients in a small bowl; to make truly Spicy Pork – rub the meat with spice mixture. Put it to the fridge for half an hour.

Coated large nonstick skillet with cooking spray and heat it over medium-high heat. After add pork. Cook 6-8 minutes; brown on all sides. Place on a broiler pan coated with cooking spray. Bake at 375° for 30 minutes. If you have a thermometer, it should register 155°. When the meat is ready, let it stand 10 minutes before slicing.

While Spicy Pork bakes, melt the butter in a medium saucepan over medium-high heat. Add the onion, and cook 10 minutes or until golden brown, stirring frequently. Add ginger, and cook 3-4 minutes. Stir in broth and syrup, scraping pan to loosen browned bits. Bring broth mixture to a boil; cook about 10 minutes until reduced to 3/4 cup.

Cut Spicy Pork into slices and serve with Ginger-Maple Sauce.
