Warm Salad With Sweet Potato And Honey-Maple Vinaigrette Recipe

  • peeled and cut sweet potatoes: 2 pounds (6-7 cups)
  • olive oil: 5 tablespoons
  • cider vinegar: 3 tablespoons
  • honey: 2 tablespoons
  • Viking Farms Maple Syrup: 2 tablespoons
  • minced garlic clove: 1 small
  • Dijon mustard: 1/2 teaspoon
  • fresh baby spinach: 1 package (6 ounces)
  • 1 apple (chopped)
  • pecans (toasted and chopped): 1/2 cup
  • blue cheese (crumbled): 1/2 cup
  • salt, pepper


Turn on the oven and preheat it to 400°. While the oven is heating, prepare cubes of Sweet Potato and place them in a greased 15x10x1-in. baking pan. Toss with oil (2 tablespoons). When the temperature is high enough, roast the potato about 40 minutes, it should get tender.

While waiting, whisk vinegar, maple syrup, honey, mustard, garlic, salt, pepper and remaining oil in a small bowl, until blended.

When potatoes are ready, transfer them to a large bowl to cool slightly. Then, while Sweet Potato is still warm, add in the chopped apple, pecans, and spinach. If you want, pecans can be replaced with walnuts or pine nuts.

Toss the salad with prepared vinaigrette. Put cheese on the top.

Better to serve immediately while it remains warm!

If you want this salad to be more hearty – add any fried poultry you prefer! In this case it can be served as a main course.
